Ratatouille: A Classic and Flavorful French Vegetable Stew

 

Ratatouille is a classic French dish that hails from the Provence region of France. It’s a hearty and flavorful vegetable stew made with eggplant, zucchini, bell peppers, tomatoes, and herbs. This dish is perfect as a side or main dish and it’s ideal for vegetarians, it’s also a great way to use up any vegetables you have on hand. Here’s a traditional recipe for Ratatouille that you can make at home.


Ingredients:

  • 1 medium eggplant, diced
  • 2 medium zucchinis, diced
  • 2 bell peppers, diced
  • 2 tomatoes, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 2 tablespoons of chopped fresh basil
  • 2 tablespoons of chopped fresh thyme
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions:

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the eggplant, zucchinis, bell peppers, and tomatoes and sauté for 5-7 minutes or until softened.
  2. Add the garlic, basil, thyme, salt, and pepper and stir to combine.
  3. Reduce the heat to low and simmer for 20-30 minutes or until the vegetables are tender and the flavors have melded together.
  4. Serve the ratatouille in plates or bowls, garnished with grated Parmesan cheese, if desired.
