Cassoulet: A Hearty French Stew That Will Warm Your Soul

 

Cassoulet is a hearty French stew that hails from the Languedoc region in the south of France. This dish is traditionally made with white beans, meat such as pork, duck, or sausage, and vegetables, making it the perfect comfort food to warm you up on a cold winter night.

To make Cassoulet, you will need the following ingredients:

    • 2 cups of dried white beans, soaked overnight
    • 6 slices of bacon, diced
    • 2 pounds of pork shoulder or pork belly, cut into chunks
    • 1 pound of duck legs or confit
    • 1 pound of pork sausage or linguica
    • 1 onion, chopped
    • 2 cloves of garlic, minced
    • 2 carrots, chopped
    • 2 stalks of celery, chopped
    • 1 cup of chicken or beef stock
    • 1 cup of dry white wine
    • 1 bouquet garni (a bundle of herbs such as thyme, bay leaves, and parsley)
    • Salt and pepper to taste
    • Breadcrumbs for topping

    To begin, preheat your oven to 350°F (175°C). Drain and rinse the soaked white beans and set them aside. In a large Dutch oven or heavy-bottomed pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set it aside.

    Add the pork shoulder or pork belly to the pot and brown the meat on all sides. Then, add the duck legs or confit, pork sausage or linguica, onions, garlic, carrots, and celery and cook for a few minutes more.

    Pour in the chicken or beef stock and white wine and bring the mixture to a boil. Add the bouquet garni, salt, and pepper. Add the white beans and stir everything together.

    Place a lid on the pot, or cover it with foil, and transfer it to the oven. Bake for 2-3 hours or until the beans are tender and the meat is cooked through.

    When the Cassoulet is ready, remove the bouquet garni from the pot and discard it. Sprinkle breadcrumbs over the top and return the pot to the oven for 10-15 minutes or until the breadcrumbs are golden brown and crispy.
