Quiche Lorraine: A Classic French Tart That Will Satisfy Your Appetite

 

Quiche Lorraine is a classic French savory custard tart that originated in the Lorraine region of northeastern France. This dish is filled with bacon, onions, and Gruyère cheese, making it a delicious and satisfying meal that is perfect for breakfast, lunch, or dinner.


To make Quiche Lorraine, you will need the following ingredients for the crust:

  • 1 1/4 cups of all-purpose flour
  • 1/2 cup of unsalted butter, chilled and diced
  • 1/4 teaspoon of salt
  • 2-3 tablespoons of ice water

For the filling, you will need:

  • 1/2 pound of bacon, diced
  • 1 onion, chopped
  • 3 eggs
  • 1 cup of heavy cream
  • 1/2 cup of milk
  • 1 cup of grated Gruyère cheese
  • Salt and pepper to taste

To begin, make the crust by mixing the flour, butter, and salt together in a bowl until the mixture resembles coarse crumbs. Slowly add the ice water, one tablespoon at a time, until the dough comes together. Form the dough into a disk and wrap it in plastic wrap. Refrigerate the dough for at least 30 minutes.

When the dough has chilled, roll it out on a lightly floured surface to fit a 9-inch (23cm) tart pan with a removable bottom. Press the dough into the pan and prick the bottom with a fork. Place the crust in the refrigerator to chill for another 30 minutes.

Meanwhile, preheat your oven to 375°F (190°C). Cook the bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and set it aside. Add the onions to the skillet and cook until softened.

In a separate bowl, whisk together the eggs, cream, milk, salt and pepper. Spread the cooked bacon and onions evenly over the crust and then pour the custard over the top. Sprinkle grated cheese over the top.

Bake the quiche for 35-40 minutes or until the crust is golden brown and the filling is set. Let it cool for a few minutes before slicing and serving.
